The Henry Ford College (HFC) Culinary Arts Dept. will hold Courses X: Chef Certification/Student Scholarship Dinner on Thursday, April 23, at 6 p.m. at Fifty-One O One, HFC’s student-run restaurant on the main campus.
At this dinner, Joseph E. Cosenza, HFC culinary arts instructor and chef de cuisine, will be honored. The American Culinary Federation (ACF) recently awarded Cosenza the title of Certified Executive Chef (CEC) based on his educational, experience and testing requirements for certification. ACF Certification consists of a written exam, practical cooking exam, documentation of formal educational credentials and documentation of work experience managing a food production facility over a specific number of years.
“Only those chefs who have met all of the certification requirements are entitled to use the CEC credential. Chef Cosenza deserves this credential. He has been an invaluable asset to the HFC Culinary Arts Dept. since he came aboard more than three years ago,” said Eric Gackenbach, HFC Culinary Arts lead instructor/ACF program coordinator.
There will be a number of exceptional dishes served at this seven-course semi-annual spring dinner. Some of these include the following:
Charred striploin;
Korean-style short ribs;
Mushroom puree with sweet potato dumplings;
Broccoli and roasted mushrooms;
grilled semi-boneless quail;
Dijon-crusted pork belly; and
Roasted sea scallop.
There will also be an assortment of house-made breads and hors d’oeuvres, including terrine, charcuterie, and canapés. Orange Almond Fancier, Amaretto Foam, spiced almond crunch, and chocolate ice cream will be available for dessert.
Coffee and tea service included. Beer and wine will be available for purchase. Wine is available for purchase by the glass ($4) or by the bottle (between $16.25 and $22.50). You must have a valid ID to purchase alcohol.
The cost to attend this dinner is $45 per person, $30 of which is a tax deductible donation to the HFC Hospitality Scholarship Fund. To purchase a seat at this scholarship dinner, you may send checks or bring cash to the HFC Foundation Office, located in Room 325 of the Andrew A. Mazzara Administrative Services & Conference Center (ASCC) at 5101 Evergreen Rd., Dearborn, MI 48128-1495. Please note in the memo section that it is for the “Hospitality Scholarship Dinner.”
