Beefsteak tomatoes are one of the largest varieties of tomatoes. Tomatoes, which are technically a fruit, are one of the local bounty’s many treasures.
Beefsteaks are great for slicing and sandwich making. This week our Geronimo Beefsteak tomatoes come from Tantré Farms in Chelsea, MI. The farm has been a certified organic farm since 1993. The goals at Tantré Farm are to produce fresh, healthy foods for the local community, provide quality of life for the farmer, and sustain economic viability for the farm with care and respect for nature’s diversity.
Tomato Carrot soup
1 tsp butter
1/2 tsp black pepper
salt to taste
1. Cut carrots and tomatoes into big pieces. Cook them with one cup of water in pressure cooker or on the stove top until they are completely cooked.
2. Cool and blend in a blender to a smooth paste.
3. Bring the mixture to a boil adding 2 cups of water. Add salt and pepper.
Serve hot, garnish with butter and crusty bread.
