TABBOULEH SALAD
by Dr. Paul Chhabra 2 Pickling Cucumbers, chopped 4 stalks Celery, chopped, including leaves 1 Carrot, chopped 2 cups fresh Parsley, chopped 10-20 soaked almonds (8-10 hours), or 1/2 cup soaked favorite whole grain or oat groats (7-8 hours), or fresh or soaked dried holy basil leaves (10 minutes) 1/2 cup fresh Mint Leaves, chopped Dressing: 1 TBS fresh Lemon Juice 2 TBS Extra Virgin Olive Oil Sea Salt to taste Feel free to adjust the recipe to your taste.
